Paste, texture and maturation:
It is a creamy goat cheese handly-made following an artisan style with pasteurized milk obtained in a traditional way. Its paste is pleasant, uniform and smooth, with a creamy and unctuous texture. We mature this cheese between 8 and 10 days in our chambers, with optimal temperature and humidity conditions, so that the mold (penicillium fungus) on its rind develops properly and provides the organoleptic nuances that define the personality of this type of cheese.
Colour, aroma and taste:
It is a very attractive rustic looking cheese with a snowy moldy white rind. A lovely, even, soft, aerated paste. Creamy and unctuous in the mouth, there is a great balance of rich creamy milk and a lovely gentle fresh acidity, which releases bright fresh citrus notes that are bringing a well judged, mild, fresh and clean tasting cheese. It is made following a 100% natural artisan style. Flavor of very mild intensity (1/5) with an upward trend as it evolves.
This cheese has been awarded with 1 star at the Great Taste Awards 2020, the world’s most prestigious food and beverage awards. It has the black and gold medal of honour from the Great Taste Awards on its label, indicating that it is an exceptional product.
Shape: whole round cheese.
Net weight: 330g approx.
Presentation: it has a perforated paper wrapper that allows the penicillium (mold) to breathe as it evolves.
It is surprising for its creamy texture and mild tasty. It becomes the protagonist of any varied cheese board by its texture and creaminess. It is recommended to take it natural as a starter or in combination with other appetizers, or as a dessert, combining very well with soft jams.

- Conservation and Shelf-life:
It should be kept refrigerated, between 2ºC and 6ºC. Its preferred consumption is 3 months from its date of manufacture. In online orders it is guaranteed that the cheese has at least 2 months of preferential consumption from its reception at home.
